Game Day Red Chili

Game Day Red Chili

1 tbsp. olive oil

2 lbs. ground sirloin

1 large onion, chopped

3 garlic cloves, minced

1 green, orange or red pepper, seeded and diced

1 Serano pepper, seeded and diced

1 poblano or anaheim pepper, seeded and diced

1 can (10.75 oz.) tomato puree

1 can (10 oz.) Rotel tomatoes (any flavor)

1 tbsp. ground cumin

1/2 cup of red chili powder

1 tsp. salt

1/2 tsp. cracked black peppercorns

3 cups beef broth

2 cans red beans or chili beans, drained

In a large pot, over medioum high heat, cook the ground sirloin in the oil until browned. Add onions, garlic and saute for 5 minutes. Add all the remaining ingredients and bring the mixture to a boil.

Reduce heat and simmer for 1 hour, stirring occasionally.

Season to taste and add toppings of your choice, Enjoy.

*Also can cook in crock pot on low for 4-6 hours.

**Toppings: cheddar cheese, chopped green onion, mexican cream or sour cream.

Serve with crackers or Fritos.
