Sweet n Spicy Zucchini Relish

Sweet n Spicy Zucchini Relish

 

12 cups chopped zucchini

6 chopped orange and red bell peppers, cored and seeded

2 medium red onions, chopped

3 jalapeno peppers, cored and seeded, chopped

1 tsp. crushed red pepper flakes

Brine:

1 package Mrs. Wages Bread n Butter pickle mix

6 3/4 cups distilled white vinegar

7 cups granulated sugar

Wash all vegetables. Cut out all cored and dispose of seeds (peppers). Cut into smaller sections and add into a food processor to chop vegetables.

Mix together. Add red pepper flakes and mix well.

Mix 1 package of Mrs. Wages Bread and Butter pickle mix with the vinegar and sugar in pan over medium heat. Bring just to a boil.

Distribute vegetable mixture (do not pack) into steralized jars, pour brine mixture over vegetable relish leaving 1/2 inch head space. Wipe off jar rims, cap each jar with warmed lids, place rings on jars, place jars into boiling water bath canner. Process quarts for 15 minutes and pints 10 minutes. Cool completely for 24 hours. Test jars for airtight seals. If jars do not seal, refrigerate and consume within 2 weeks.
